Taiwan’s pineapple cake — 豐利蘇 (鳳梨酥) — is the island’s most beloved souvenir. Tourists stuff their carry-ons with it. Relatives expect it at every homecoming. And yet, until fairly recently, most pineapple cakes contained almost no pineapple at all.
The Winter Melon Secret
Traditional pineapple cake fillings were made primarily from winter melon (冬瓜, dōngguā) — a mild, affordable gourd — mixed with just enough pineapple jam for flavor. Why? Two reasons: cost and chemistry. Real pineapple contains bromelain, an enzyme that breaks down proteins and makes pastry dough sticky and difficult to work with. Winter melon holds its shape beautifully and tastes sweet without the complications.
So why call it pineapple cake at all? In Taiwanese (Hokkien), pineapple is 永來 (旺來) — which sounds like “prosperity incoming.” The fruit became a symbol of good fortune, making these buttery pastries the perfect gift for weddings, Lunar New Year, and business gestures. The auspicious name stuck even when the filling didn’t match.
The Real-Pineapple Revolution
In the mid-2000s, a handful of Taiwanese bakeries decided to take the name seriously. 陽光山 (微熱山丘) partnered directly with Guanmiao pineapple farmers in Tainan and reformulated the filling — no winter melon, no shortcuts. The result was tangier, more complex, and considerably more expensive. Vigor Kobo, Le Ruban Pâtisserie, and a wave of artisan bakeries followed suit.
The movement transformed a cheap airport gift into a premium craft product. Today, a box of top-tier pineapple cakes from a Taipei specialty shop can run NT$400–800 (about US$12–25), and customers often queue 20 minutes to get them. They’re also a point of Taiwanese pride — made with local fruit, supporting local farmers.
How to Spot a Real Pineapple Cake
- Read the ingredients: Look for 鳳梨 (fènglí, pineapple) as the primary filling. If 冬瓜 (dōngguā, winter melon) appears first, it’s the classic blend.
- Feel the texture: Real pineapple filling is slightly fibrous and pulls apart like thick jam. Winter melon filling is smoother and more uniform.
- Taste the acidity: Genuine pineapple has a bright, citrusy tartness. Winter melon is sweeter and milder.
- Check the price: Cheap usually means winter melon. Premium real-pineapple versions cost noticeably more — and are worth every bite.
